Here are some recipes which use the ?Optifast Diet diet food, but they could be applied to other "diet food" diets also.

Soup Recipes

Here are recipes that use the Optifast soup powder.

Soup with Onion

  • 1 pkt soup powder
  • 200 ml water
  • 1 onion

  • Chop onion

  • Cook in microwave 1 minute on high
  • Put cooked onion in large bowl
  • Make up the soup powder with water, pour into the bowl over the onions
  • Cook in microwave 1-2 minutes on high

Makes 1 serve.

Milkshake Recipes

Here are recipes that use the Optifast milkshake powder.

Strawberry Fruit Smoothie

This uses one piece of fruit from one's quota.

Beforehand:

  • 1 piece of fruit
  • 1 small freezer container

Chop up the fruit and freeze in the freezer.

Ingredients:

  • 1 serve frozen chopped fruit
  • 1 pkt strawberry (or vanilla) milkshake powder (not the coffee or chocolate, they drown the flavour of the fruit)
  • 200ml water (or a bit more)

  • While the fruit is still frozen, puree it in a blender or with a stick blender. It may help to add a bit of room-temperature water first; at most, just enough to cover the fruit.

  • Add in the milkshake powder and the water, and blend together.

Makes 1 serve.

One can also use pre-frozen berries rather than freezing your own fruit; one can get mixed berries, raspberries and strawberries from the frozen food section of the supermarket.

Fruit that works well:

  • banana
  • mango
  • berries (one handful)
  • honeydew (one handful of chopped pieces)
  • canteloupe (one handful of chopped pieces)

Fruit that doesn't work (because it is too acidic):

  • pineapple
  • kiwifruit

Ice Cream Recipes

If you have an ice-cream maker, you can use the milkshake powder as a pretty good base for ice cream.

Coffee Ice Cream

  • 3 pkts coffee milkshake powder
  • 600ml water

  • mix ingredients

  • pour into ice cream maker and churn

Makes 3 serves. I generally freeze two serves in the freezer and eat one straight away; it is nicest when fresh. When the ice cream has been frozen in the freezer, it is rock-hard and needs to be thawed a bit. I heat it for 1 minute in the microwave on MediumLow power; any more and it will melt too much.

Cinnamon Ice Cream

  • 3 pkts vanilla milkshake powder
  • 6 tsp cinnamon
  • 6 tsp Splenda granular (or other non-sugar sweetener)
  • 600ml water

  • mix ingredients

  • pour into ice cream maker and churn

Makes 3 serves.

This one is very cinnamony, so if you find it too overpowering, reduce the amount of cinnamon.

Gingerbread Ice Cream

  • 3 pkts vanilla milkshake powder
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 3 tsp cinnamon
  • 3 tsp ginger
  • 6 tsp Splenda granular (or other non-sugar sweetener)
  • 600ml water

  • mix ingredients

  • pour into ice cream maker and churn

Makes 3 serves.

Mocha-Chocolate Ice Cream

This one has a mocha undertone, but the chocolate flavour dominates. The soluble fibre makes the ice cream more creamy.

  • 2 pkts coffee milkshake powder
  • 400ml water
  • 4 tsp carob powder
  • 4 tsp raw organic cocoa powder
  • 5 tbsp Splenda granular (or other non-sugar sweetener)
  • 3 tbsp flavourless soluble fibre (I used Benefibre, but Metamucil Fibre Clear or Nutralife Crystal Clear Fibre would probably work too)

  • mix ingredients

  • pour into ice cream maker and churn

Makes 2 serves.
